The silent link between a July storm and the scent of scorzone

An experienced truffle hunter never looks only at the ground. He looks at the sky. He knows that the truffle you'll bring to the table in a few weeks is being decided right now, on these summer days — not at the moment it's unearthed.

Rain, which to many seems just an inconvenience that ruins a sunny day, is actually the invisible architect of every truffle season. Without the right rain at the right time, no amount of aroma will follow.

Rain doesn't just water the truffle. It creates it.

The truffle — both the prized winter black truffle and the scorzone we harvest in these months — isn't a fungus that simply "grows" in the soil like a plant. It's born from a symbiosis, mycorrhiza, between the fungus's mycelium and the fine roots of trees like oak, hazel and holm oak. It's an underground pact, silent, that lasts all year.

But it's between late spring and early summer that the decisive moment happens: fertilization. And it's precisely in those weeks — May, June, early July — that rain becomes irreplaceable. Agronomic studies are clear: mycorrhizal colonization, mycelium sexualization and the formation of the peridium (the truffle's "skin") are directly governed by summer rains. It's not a minor detail: it's the difference between an abundant harvest and a poor one.

Roots are the go-between, not chance

Rain doesn't reach the truffle directly. It first reaches the oak, which carries it through its roots to the exact spot where the mycelium has settled. It's a slow, silent delivery system that requires continuity — not an isolated downpour, but weeks of steady moisture in the soil.

It's in these months that the truffle, already fertilized, begins to gain weight and build the aroma that makes it recognizable — a process that continues into autumn.
